Commercial Griddle Maintenance 101

The commercial griddle is one of the most versatile pieces of restaurant equipment that you can add to your commercial kitchen or concession stand. You'll find three different types of cooking griddles including countertop gas commercial griddles, countertop electric commercial griddles and stove top griddles.  Capable of cooking everything from a fried egg to a piece of meat on one cooking surface, these pieces are designed for maximum effectiveness without risk of flavor transfer. If you do not care for your griddle properly, however, you cannot expect quality results.

The first step to maintaining your commercial griddle is seasoning it. This does not refer to adding any flavor to the product, but actually creating a non-stick surface. This is accomplished by cooking oil into the metal surface so that food being cooked on the surface will not stick. Start by rubbing cooking oil or lard into the griddle using a soft, lint-free cloth. Heat the griddle to 400 degrees and wait until the signal light turns on then turn off the griddle and allow the surface to cool completely. Wipe off the oil then repeat the process.

Of course, you will also need to clean your commercial griddle. Here are some tips for keeping your commercial griddle clean, safe, and productive:

·         Scrape the griddle surface clean with a grill scraper after each usage to remove any residue. You'll often find grill scrapers with other janitorial products and cleaning brushes.  There are also scrub pads like the Continental GCS Griddle Cleaning System that are specifically made to clean your griddle. 

·         At the end of each day that you have used the commercial griddle make sure that you remove and completely empty the grease collection trough. Use a grill brick or a grill brush to clean the cooking surface thoroughly, making sure that you are cleaning a warm grill and rubbing in the correct direction as to not damage the surface.

Once a week clean the completely cooled griddle with a food grade degreaser.
